Key Lime Pie

Ever since traveling to Saint Thomas with girlfriends, where key lime pie is a staple – we’ve been on a quest to recreate the perfect key lime pie. Mission accomplished with this recipe!

This pie has the perfect ratio of crust to filling and balances the tartness of the lime with the right amount of sweetness. Using greek yogurt in this recipe adds a nice creamy texture and of course reduces some of the guilt!

Serving Size: 9 inch circle pie pan – yields 8 generous slices

Ingredients:

  • 1 1/2 cup graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/3 cup melted butter (unsalted)
  • 2 eggs
  • 1/4 cup greek yogurt
  • 14 oz can condensed milk (sweetened)
  • 1/2 cup fresh lime juice
  • lime zest (from 1 lime)

Directions:

  1. In a mixing bowl combine graham cracker crumbs, sugar and melted butter until the butter has evenly coated everything
  2. Press the graham cracker mixture into your greased baking pan and bake for 5 minutes on 350F – let cool while you work on the next step
  3. In another mixing bowl whip together eggs, greek yogurt, condensed milk, lime juice and the zest of one lime
  4. Pour the filling mixture over the graham cracker crust and bake for 15 mins on 350F
  5. Let the pie cool and refrigerate at least 2 hours before serving
  6. Enjoy!
These are the ingredients needed. Fresh squeezed lime adds a ton of flavor, we highly recommend going this route versus the pre-packed juice.
To minimize the mess, place graham crackers into a large ziplock bag and use a rolling bin to crumble.
This is what the graham cracker mixture will look like when evenly coated with butter and sugar.
Press it into a greased pan to form the crust.
Place all your filling ingredients in a mixing bowl.
Whip together the filling ingredients – this is what it will look like. Pour over your crust and bake!
