Egg Bhurji

This is a fun twist on a classic Indian breakfast, replacing scrambled eggs with hard boiled eggs.

While grabbing a post workout meal in India a few years back, we were lucky enough to stumble upon this dish. Needless to say, we devoured it and knew we had to recreate it once we were back home. Since then, egg bhurji has become a weekend brunch staple and a hit amongst our friends!

Pairs With: Toasted bread with butter and masala chai

Healthy Option: Remove some or all of the egg yolks

Serving Size: Makes 2 servings

Ingredients:

  • 1 tbsp olive oil
  • 6 hard boiled eggs shredded
  • 1 serrano pepper diced
  • 1/2 cup cilantro chopped
  • 1/2 large onion chopped
  • 3/4 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp pav bhaji masala (we used Badshah brand)
  • 3/4 tsp salt (or to taste)
  • 1/4 tsp red chili powder (optional)
  • 1/4 cup shredded amul cheese (optional)

Instructions:

  1. Heat olive oil on medium heat and add in onion and serrano pepper, sauté for 2 minutes
  2. Add in turmeric, garam masala, salt and pav bhaji masala and if desired add red chili powder and sauté for 5 minutes until onion is soft
  3. Gently mix in shredded eggs and cilantro and stir to combine with onion mix
  4. Serve topped with amul cheese or your favorite shredded cheese
